I love love love this … and I have some small tomatoes that I need to preserve because I won’t eat them all in time!

Any recipe where you would use tomatoes for, you can use these roasted tomatoes in to add an exuberant amount of flavor to all your dishes. I always have to many cherry tomatoes at once – so give away what I can’t eat – but will try this in the future.

I used to dice the whole tomatoes or simple squeeze them my hand, but now I've discovered that a stick blender can easily be used to turn them into chunky or smooth or in between. You can use any type of seasoning blend that you want, but to prevent the herbs and spices from burning, you’ll want to watch them closely. However, perhaps using a seasoning that resembles a fire roasting would even taste better than Italian seasonings in this recipe (especially if you are roasting in your oven! When I got home I tasted through the different colors and shapes, each different and intriguing – some sweet, some tart. Finally, depending on the cooking method you choose: grill the tomatoes until they are charred (several minutes) or roast them in the oven for 45-50 minutes.

This recipe sounds wonderfully simple and delicious, just wanted to double check the oven temperature, Celsius or Fahrenheit…. While I can’t promise these will be as good as they would be San Marzano, fire-roasted tomatoes at home are SO much better than canned.Halve a variety of cherry tomatoes sprinkle with salt, pepper, fresh herbs, I like thyme, rosemary or basil.
