Brown-Forman also owns the Herradura Tequila brand, which grew by 11% in fiscal 2023. Blanco is El Jimador’s take on silver tequila or tequila that hasn’t spent any time ageing in oak barrels. Because of that, this vibrant tequila is fresh and crystal clear. Jimador Blanco Tequila is a solid and well-made distillate that has been around since 1897 and ranks among the worlds most popular tequilas. This is not a handmade product or anything particularly valuable, but it is a discrete tequila that does not let you down and is clean and precise from a technical point of view. A jimador is a type of farmer who harvests agave plants, which are harvested primarily for the production of mezcal, sotol and tequila. This task requires the skill of identifying ripe agave, which ripens in between 5 and 35 years, depending on the agave species. Unripe agave can have a bitter or overly sweet taste, ruining the distilled spirits made from them. The primary tool of a jimador is the coa de jima or simply coa. This is a flat-bladed knife at the end of a long pole that resembles a hoe. The coa is used to first remove the flower from the agave, which causes the central pineapple (or piña) to swell. Later, the piña is harvested, using the same tool to cut off all of the external leaves of the plant, leaving only the pulpy center which is then chopped and cooked in preparation for the mezcal or tequila production.Look out for faint spice and peppery notes in between the swirl of agave flavours. This finish is smooth, soft, and dangerously inviting. The Jimador uses a special tool, a Coa, which is a long wooden handle with a sharp circle cutting blade at the bottom. He thrusts the Coa with an exact precision to cut the leaves (Pencas) off of the Agave and reveal the core, which is called the piña. The piña looks like a large pineapple, and can weigh as much as 150 pounds. The Jimador is the artisan who harvests the Agave plant from the Agave fields. His knowledge allows him to recognize when the Agave plant is ready for harvesting as each plant will grow and mature at a different rate. As the Agave plant reaches maturity (8-12 years), a stalk or spike (Quiote) will begin to grow from the Agave, and the Jimador will cut and remove the stalk. The energy from the plant's flowering cycle will then encourage growth on the core of the Agave. The plant will be ready for harvesting 2-3 months later. The key to harvesting the Agave plant is to get the maximum sugar content before the piña begins to ferment.
